Caprese with Olives

After my recent move, I now live close to a gardening shop where you can buy a large variety of plants. This might not be good for my budget, but I LOVE it. Now I can get all kinds of flowers, trees and herbs in walking distance and put them in my tiny garden. 

Among the many herbs I bought last summer was Santolina rosmarinifolia, commonly known as olive herb, a light green, rather unimposing little plant. Olive herb tastes like olives even though it actually has nothing to do with the olive plant.

I thought this would be a great base for a salad dressing (I was right). 

Here’s a recipe for a tasty (and very nicely arranged) caprese with olives.

Description

Caprese with an olive-twist!


Ingredients

Scale

300g cherry tomatoes

100g black olives

150g mozzarella

4 tbsp olive oil

1tbsp balsamico vinegar

1 garlic clove

1 teaspoon honey

2 tbsp olive herb

pepper

salt

basil leaves


Instructions

For the marinade dressing, combine olive oil, balsamico and honey. Press the garlic (or cut as thinly as possible) and add it to the dressing. Add the finely cut olive herb, and season with pepper and salt.

Cut the cherry tomatoes in half, and thoroughly mix them with the dressing. In a covered container, let them marinade in the fridge for about 20 mins.

In the meantime, cut the mozzarella into thin slices, and the olives into halves.

Take the tomatoes out of the fridge, and stack the them, the mozzarella slices and the olives into neat rows (or however you prefer). Decorate with basil leaves, and spread any leftover dressing over the salad. Serve with bread.
